Skirt steaks are a long, thin beef cut made from the cow's diaphragm muscles. When correctly prepared, they are extremely tasty and tender and work best when grilled or broiled. Skirt steaks are frequently used in South American and Mexican recipes including chimichurri, fajitas, and tacos.
