Cooking Tips
Handle this ground beef gently-the high fat content means it's more delicate than conventional ground beef. For smash burgers, press firmly once on a screaming-hot flat-top or cast iron pan, then don't touch it for 2 minutes. The edges will crisp into a lacy, caramelized crust while the center stays impossibly juicy. Season with salt only. For meatballs, use a light touch when mixing and bake at 400°F for 15-18 minutes rather than pan-frying.
