The petite tender is best treated like a small tenderloin. Sear on all sides in a hot pan for about 2 minutes per surface, then finish in a 375°F oven to 125°F internal. Its compact size means it cooks quickly-watch carefully. Rest for 5 minutes, then slice into medallions.
