Cooking Tips
This steak loves high heat and fast cooking. Sear on a blazing-hot cast iron or grill for 2-3 minutes per side-no more. The flat iron's even thickness means it cooks uniformly without the thin edges overcooking. Target 125°F internal temperature for medium rare. Rest for 5 minutes, then slice against the short grain. A compound butter with roasted garlic and herbs melted over the top is an exceptional finishing touch.
