Cooking Tips
Bring to room temperature for 20 minutes. Season with salt and pepper. Sear in a preheated cast iron pan over medium-high heat for 3 minutes per side. The fullblood marbling will render beautifully, creating its own cooking medium. Finish in a 375°F oven to 125°F internal. Rest 5 minutes. For an elevated weeknight dinner, top with sautéed mushrooms and a drizzle of truffle oil.
