Cooking Tips
Get your grill as hot as it will go. The skirt steak wants aggressive, direct heat for a short time-about 2 minutes per side. The goal is a deep char on the exterior while keeping the interior pink and juicy. Do not overcook this cut. Remove from heat, rest for 5 minutes, then slice across the short side of the steak against the visible grain into thin strips. For a simple marinade, combine olive oil, lime juice, cumin, garlic, and a pinch of chili flake. Marinate for 2-4 hours (no longer, or the acid will break down the texture).
