Cooking Tips
These ribs cook faster than plate ribs due to their thinner profile. Smoke at 250°F for 3-4 hours until the meat pulls back from the bone tips and internal temperature reaches 195-200°F. Alternatively, roast at 300°F in a covered roasting pan with a splash of apple juice for 2.5-3 hours. Finish uncovered for the last 20 minutes with your favorite glaze for a caramelized exterior. Great for a quick Shabbat prep—start in the morning, serve at sundown.
