Cooking Tips
Heat a heavy skillet over medium-high until it just begins to smoke. Pat the steak dry, season with salt and pepper, and sear for 3 minutes per side. Transfer to a 350°F oven and cook to your desired doneness-we recommend 125°F internal for medium rare. Rest for 5-8 minutes under loose foil. The thick cut and generous marbling respond beautifully to the reverse-sear method: start in a 250°F oven until 110°F internal, then finish with a hard sear. The result is edge-to-edge perfection.
