Cooking Tips
Bring to room temperature 30 minutes before cooking. Season simply - kosher salt and pepper let the wagyu marbling speak for itself. Sear in a ripping-hot cast iron skillet with a high smoke-point oil for 3–4 minutes per side for medium-rare (130°F). Rest 5 minutes before slicing against the grain. The flat iron's uniform thickness makes it one of the easiest steaks to cook evenly. Avoid cooking past medium - the abundant marbling keeps it juicy at lower temperatures.
