Cooking Tips
For Slow Cooking: Treat like a mini brisket. Use your favoirte veggies and some wine or broth and braise for 4-5 hours till fork tender.For roasting: season generously, sear on all sides in a hot pan, then roast at 325°F until 130°F internal for medium rare. Rest for 15 minutes before slicing thin. The lifter meat's shape and marbling make it excellent for slicing into thin deli-style cuts when served cold. For a quick preparation, slice into steaks across the grain and sear in a hot skillet for 2-3 minutes per side.
