Cooking Tips
Cut the oxtail into individual segments at the joints if not already done. Sear in batches until deeply browned on all sides. Braise in a flavorful liquid (beef stock, wine, tomatoes, and aromatics) at 300°F for 3-4 hours until the meat falls from the bone. The braising liquid will set into a rich gelatin when cooled—this is the mark of a properly braised oxtail. Reheat gently and serve over rice, polenta, or with crusty bread to soak up the sauce.
