Cooking Tips
Remove the membrane from the back of the rack for the best smoke penetration and texture. Apply a simple rub of salt, pepper, garlic powder, and smoked paprika. Smoke at 250°F for 3.5-4 hours until the meat has pulled back from the bone tips. A quick glaze of honey and soy sauce in the final 15 minutes creates an irresistible sticky-sweet finish. Rest for 10 minutes, then slice between the bones.
