Cooking Tips
For best results, bring the steak to room temperature 30-45 minutes before cooking. Season generously with coarse salt and freshly ground black pepper. Sear in a screaming-hot cast iron skillet for 2-3 minutes per side, then finish in a 400°F oven until the internal temperature reaches 125°F for medium rare. Rest for at least 8 minutes before slicing. The abundant marbling makes this steak forgiving-it stays juicy even if slightly overcooked. For grilling, use a two-zone setup to manage flare-ups from the rendering fat.
