We begin with Fullblood Wagyu Lifter Meat, the 'Top of the Rib', where the magic lies in letting the rich Wagyu fat render naturally. Ingredients

3-4 lbs of Fullblood Wagyu Lifter Meat

2 White Onions
-
1.5 cups of beef broth
-
ยฝ cup of red wine
-
Salt & pepper to taste
Directions
Slice Onions
Heat 2 tablespoons of olive oil in a large dutch oven oven on stove top.
Sear meat on both sides until golden brown & remove.
Sautee onions in the beef renderings until golden brown.
Deglaze the pan with red wine while mixing in any scraping from bottom of the pan.
Add beef broth and simmer for 5 minutes mixing occasionally.
Pre-heat oven to 325 F.
Place meat back into dutch oven.
Cook for 3.5 hours.
Rest for at least 1 -2 hours.
Slice & enjoy!
