Chef Ricco's Korean Beef Stew

Braising Liquid

- 1/2 chopped onion

- 6 chopped cloves garlic

- 1 cup soy sauce

- 1.5 cups water

- 1 can of sprite or ginger ale

- pinch of chili flakes

- 1 apple or pear

- 3 tablespoons We Love You Gochujang Chili Sauce

- 2 lbs Stew Meat or Korean Short Ribs



- 1/2 cup Japanese sweet potatoes 

- 1/2 cup cippolini onions

- 1/2 cup shiitake mushrooms


1) Sear your favorite stew meat or ribs to get a nice crust

2) Purée braising liquid ingredients together

3) Place meat and veggies in a dutch oven

4) Pour braising liquid over 

5) Braise in dutch oven at 275 F for 4 hours 

6) Add chopped sweet potatoes  

7) Braise for an additional 1-2 hours, depending on the cut you're using

8) Enjoy!
