Cooking Tips
Maximum heat, minimum time. Grill over the hottest fire you can build, or sear in a cast iron pan heated until it just starts to smoke. Two minutes per side-no more. The Fullblood marbling will cause significant flare-ups on the grill, so keep a cooler zone ready. Rest 5 minutes, then slice thin against the grain. For a quick kosher weeknight dinner, serve over warm pita with pickled onions and tahini.
