Cooking Tips
The hanger steak has a pronounced center membrane that divides it into two columns-both come in your package, ready to cook. Season simply with salt and pepper 30 minutes before cooking. Sear over high heat for 2-3 minutes per side, rotating to caramelize all surfaces evenly. Cook to medium rare (125°F) and no further-overcooking this cut makes it tough. Rest for 5-8 minutes, then slice thinly against the visible grain. This steak is exceptional with chimichurri or a simple red wine reduction.
