Cooking Tips
For smoking: trim the fat cap to about 1/4 inch. Season with equal parts coarse salt and coarse black pepper (the classic Texas rub). Smoke at 225-250°F with post oak or hickory for 12-16 hours until a probe slides into the thickest part of the flat with zero resistance (around 203°F internal). Wrap in butcher paper when you hit the stall at ~165°F. Rest wrapped in a cooler for at least 1 hour. For braising: sear all sides, then braise in a mixture of beef stock, onions, and garlic at 300°F for 4-5 hours until fork-tender.
