Cooking Tips
Sear the cheeks on all sides in a hot Dutch oven. Add diced onion, carrot, garlic, a cup of red wine, and beef stock to cover. Braise covered at 300°F for 3-4 hours until impossibly tender. The braising liquid will reduce into an incredibly rich sauce. For tacos, shred the braised cheeks and serve on warm tortillas with pickled onion, cilantro, and a squeeze of lime. This is also an outstanding filling for kosher empanadas or hand pies.
