Cooking Tips
Set your smoker to 250°F with your preferred hardwood (oak and cherry are excellent choices). Season generously with a coarse salt and pepper rub-the quality of the meat should be the star. Smoke for 6-8 hours until the internal temperature reaches 203°F and a probe slides in with no resistance. Wrap in butcher paper at the stall (around 165°F) if desired. Rest for at least 30 minutes before slicing between the bones. These ribs are rich-one bone per person is often plenty.
