Cooking Tips
These rich patties are best at medium (140°F internal)—cooking beyond medium-well will waste the extraordinary marbling. Sear over high heat for 5-6 minutes on each side. For the ultimate smash burger, divide each 8-oz patty in half, ball loosely, and smash firmly on a screaming-hot griddle. Season with salt and cook for 90 seconds, flip, add vegan cheese if desired, and cook 60 seconds more. Stack two smashed patties per bun for the ultimate kosher wagyu burger experience.
