Generously season short ribs on all sides with Raspberry Chipotle Rub
Heat veggie oil in a dutch oven until hot
Sear & brown short ribs on all sides
Set short ribs aside
Sauté carrots, celery and onions until soft
Season veggies with salt, pepper and raspberry-chipotle rub
Add garlic and continue to saute until garlic begins to brown
Pour stock into dutch oven and scrape off any bits from the bottom of the dutch oven
Add crushed tomatoes
Bring to a simmer and add short ribs back to the dutch oven
Simmer for 1 hour and 20 minutes with the lid off
Add chopped sweet potatoes
Simmer for an additional 1 hour and 20 minutes with lid on
Remove from flame and rest for 30 minutes.
