Step 2) Pat your skirt dry with a paper towel.
If you have a low salt tolerance or prefer to soak your skirt steak do so in cold water for approx. 20-30 minutes.
Step 3) Drain the bowl and pat the wagyu skirt steak dry with a paper towel.
Try to get as much moisture out of the meat as possible to enjoy a nice crust. DON"T WORRY ABOUT THE COLOR OF THE MEAT AT THIS POINT.
Step 4) Heat your pan or grill to high heat, crank her up!
If using a grill make sure to move the wagyu skirt steak around frequently to build your crust.
Step 5) Once smoking hot, place the wagyu skirt steak in/on the pan/grill away from you and cook 2.5 - 3 minutes on each side.
Using the wagyu fat in place of oil will act as a beef tallow during the searing process.
Step 6) Remove the steak from the pan/grill and rest for 5 minutes on a cooling rack
Step 7) Cut your wagyu skirt steak into 3 section and rotate 90 degrees to cut against the grain.
Step 8) Enjoy!
