Cooking Tips
This is a thick, bone-in cut that benefits greatly from the reverse-sear method. Start in a 250°F oven on a wire rack until the internal temperature reaches 115°F (about 45-60 minutes). Then sear all sides in a scorching cast iron pan with a high smoke-point oil for 90 seconds per side. The bone side needs extra time—prop the steak on its bone edge for 2 minutes. Rest for 10-12 minutes. The internal temperature will rise to a perfect medium rare. This steak is generous enough to slice and share at the table.
